Akkaravadisal/Sweet pongal rich in milk & ghee

Akkaravadisal,I was not aware of this recipe actually.Recently I have watched a show in pothigai in which a lady prepared this dish.But she prepared it with millet and she also gave a hint that it normally made with rice.So I wanted to give a try with rice,tried it and it was so yummy.I would say its a perfect dish for padayal and it is easy to make also.Do give a try.




Ingredients
Raw white rice/Pacharisi-1/2 cup
Moong Dhal-1/8 cup(normally rice:moong dhal=4:1 ratio)
Milk-3 cups
Water-1/2 cup
Ghee-1/4 cup
Jaggery-1/2 cup
Cashew nuts-5 nos
Elachi powder-1/2 tsp
Saffron-few strands
Sugar-2 tsp

Fry cashew and raisins(optional) in a tsp of ghee and keep it aside.

Wash and fry moong dhal in a tsp of ghee in a pressure cooker.
Now add in washed raw rice and give a nice mix

Now add 1/2 cup water and 2 cup milk to this and close the cooker lid.Wait for 4-5 whistles.(Don`t compromise on milk quantity otherwise rice will not boil to our desired texture)
Wait for 5 more min and then open the lid.Mash the mixture well along with saffron and elachi.
Now add the remaining 1 cup of milk and give a nice mix.It will be like this in the pic.


In the meantime prepare a jaggery syrup and mix it to this.




Now add in sugar and ghee and give a nice mix.



Add in the fried nuts.
Yummy Akkaravadisal is ready to taste.
