Kaju Katli

Kaju katli is one of my all time favorite North Indian sweet.The Kaju rich sweet will definitely makes you to melt in its taste.Its easy to make with the simple home available ingredients.This is the basic Kaju Katli recipe,in this you can add your innovation and make it as your favorite nuts kaju roll or Dates nuts Kaju roll.


Lets start the preparation of the dish.

Ingredients
Cashew Nuts-1 cup
Sugar-1/2 cup
Rose essence - 2 drops 
Water-as required

Lets start by powdering the cashew into fine powder using a mixer grinder.
Now prepare the sugar syrup by adding sugar water and rose essence. (The consistency of syrup should be,If you pour it into the water it should form a fine thread and should not dissolve in water if you touch)
Now add the powdered cashew into the syrup and mix well in a medium flame.
Stir it well.At one stage,if you wet your hands with water and take a small portion from the mixture and roll it,it will form a non sticky ball that is the correct stage.Switch of the flame and mix well just for a few sec and then transfer it to the aluminium foil sheet and allow it to cool a bit.
 Now knead it well with your hand while it is little warm itself and roll it like a chappathi.
Now using a knife cut it into your desired shape.(Do it while it is warm itself) 
Yummy Kaju katli is ready to taste.
