Paruppu Vadai is one of the easiest snack we can make for the Tea time.But the only thing is we need to soak channa dhal for an hour before the preparation.This tasty crispy vada goes well with sambar rice,rasam rice also.Some people soak this vada in rasam or in butter milk gravy and make it as rasam vada,Moor kozhambu vada.It taste so yummy that no one can say no to this crispy vada.Do try this vada and let me know how it turns out for you.
Ingredients
Channa Dhal-1 cup
Chopped onion-1 medium size(Shallots/small onion tastes better than the larger variety.)
Green Chilli-2 nos
Chilli powder-1/2 tsp
Curry Leaf-as required
Coriander Leaf-as required
Jeera/Cumin seeds-1 tsp
Asafoetida-1/4 tsp
Salt-as per taste

Soak Channa dhal for an hour in water.
Grind it coarsely in a mixer grinder.
Transfer it to a mixing bowl and add the remaining ingredients except oil.(I used small onions since I like it more than the large variety onion.)
Mix it well using hands
Now make small balls out of it and flatten it to get the vada shape like this.
Fry it in the hot oil.Once you drop the vada into the oil turn the flame to medium level.otherwise the inside portion won`t get cooked but the outer portion becomes brown in color.
Drain excess oil using a paper towel.
Once you are trained well you can fry 3-4 vadas at a time.Make sure the oil is hot enough while you drop the vada batter.So adjust the flame accordingly.
Enjoy your crispy vada with coconut chutney.
Note:
Adjust the other ingredients as per your taste.
Since I like Onion Flavour I added more Onions and that too shallots/small onions.
My hubby like the coriander and curry leaf flavour in the vada and so I added more coriander leaves
too.
I used chilli powder here but you can add red chillies while grinding the channa dhal itself.It also gives you nice taste.
Adding Green chillies also gives a nice flavor but if you don't want to bite the chilies you can add chili powder itself.
If you like Garlic flavour you can add crushed or roughly chopped garlic also to it.
The process of making masal vada is more or less the same.But it adds an additional ingredients of Sombu,ginger and garlic.Will share the recipe of masal vada also soon.
