Jalebi and Jangri both are my favorite sweets.But I don`t know both are different until my college days.I tasted Jalebi at first during my PG days only.My North Indian friends loves to have ice cream with either this hot jalebi or carrot halwa.I tried this combination during one of the festival called Marketing Mela in our college and I started loving it from that day onwards.
Now heat oil + ghee (or oil and a tsp of ghee) in a thick,flat bottomed pan.Pour the jalebi batter in a Zip lock cover and draw concentric circles in the oil like this.(Note:the oil shouldn`t be too hot,you should able to draw circles at the bottom of the pan.Once its drawn it should bubble up immediately,thats the correct temperature of the oil)
Now soak the fried jalebi into the sugar syrup and then shift it to a plate.Don`t soak it for too long.Soak it till the next batch of frying is done.
Enjoy your hot hot jalebi with Icecream or as it is.

Ingredients
For the jalebi
All purpose flour-1 cup
Corn Flour-2 Tsp
Curd-3/4 cup
Ghee-1 tsp
Yellow food colour-as required
Oil+Ghee or oil-for deep frying
Saffron -for topping(optional)
For the Sugar Syrup
Sugar-1 cup
Elachi powder-1 tsp
Lemon Juice-1-2 Tsp
Rose Essence-2 drops

Mix Curd,hot Ghee,cooking soda,maida,corn flour and yellow food color well with a beater.Add required water and make it as a thick batter(like vada batter).Let it ferment for about 8-12 hours or overnight.
The Next day first start by making a sugar syrup.Add sugar,elachi powder,and water in a pan and make single string consistency sugar syrup.switch off the flame and add lemon juice,rose essence to the syrup.
Now soak the fried jalebi into the sugar syrup and then shift it to a plate.Don`t soak it for too long.Soak it till the next batch of frying is done.
Do like this for all the jalebi.Now everything is done.
