Sakarai Pongal/Sweet Pongal



Sweet pongal normally called as Sakarai Pongal is one of the Festival Special Recipe in South India.We used to prepare it during the Festival called Pongal which comes in the month of January.But Today my sister wanted to have it badly and so I prepared it for her.Its such a yummy delicious and rich dish,which is loved by everyone in the family.Especially my husband is a great lover of this dish but he loves to have it chill.So for him I usually prepared in the afternoon and refrigerate it for 2-3 hours and serve him cold when he come back from his lab in the evening.He loves it very much.Do try this recipe and have it hot or cold as per your taste. :)



Ingredients
Raw white rice-1 cup
Moong Dhal-1/4 cup
Water-3 and 1/4 cup (for boiling rice,moong dhal mixture)
Jaggery-1 cup
salt-a pinch
Elachi powder-1 tsp
Cashew nuts-10 to 15 nos
Raisins - 10 nos
Ghee-6 Tsp
Edible camphor-half in a pinch

Start by melting a tsp of ghee in a pressure cooker.
Add washed moong dhal and rice to the cooker and stir it well.
Now add water to it and mix it well
Wait for 5 whistle and then open the lid.Add cardamon powder,pinch of salt and edible camphor and mash it well with a laddle.
Now make a simple jaggery syrup by adding jaggery and water in a pan and bring it to a boil.Add very little water just to immerse the jaggery.
Add the syrup to boiled rice -moong dhal mixture and stir it well till it becomes thick

At the same time fry cashew nuts and raisins in ghee and add it to the pongal.(Since I prepared it for my sister this time, I haven`t added raisin.She don`t like it.You can add fried raisins and dates for richer taste).
Stir it well for another 2 min,till you get the correct consistency and switch of the flame.Transfer it to a serving bowl.
