Ingredients
Urad dhal-1 cup
Rice flour-1 tsp
Lemon juice- 1 tsp
Salt- a pinch
Sugar -1 cup
Cardamom powder-1 tsp
Rose essence- few drops (4 drop )
Orange food Color- as required
Oil - for frying (u can use 50 % ghee and 50 % oil)
Instructions
1. Soak urad dhal in water for 2 hrs minimum and then grind it to a fine paste by adding less water ( note the batter should be thick like the Madhu vada batter)
2. In the mean time in a pan add sugar and pour water to it just to immerse the sugar and bring it to a boil to achieve one string consistency.
3. Then add food Color,cardamom powder,rose essence and lemon juice to the syrup and switch off the flame.
4. Hear oil( or mixture of oil and ghee ) in a thick bottomed broad pan and in a low,low- medium flame.No need to add too much of oil just pour oil till one inch height in the pan.
5. Now take the batter and add rice flour,salt,food colour to it and give a nice mix.
6. Take a zip lock cover and make a small hole it the bottom of it using a hot nail.( dnt make the nail too hot otherwise the hole will be bigger)
7. Pour the batter into the zip lock cover and cover it.
8. Draw the jangri shape into the oil directly.( note:while u r drawing ,u could able to draw at the bottom of the pan. If the batter start floating while u draw then it means u need to keep the flame low. To achieve the shape draw two circles and then followed by swirls)
9. Fry till it becomes crispier and than take it out and drop it in the sugar syrup( note1. You can slightly increase the flame after ur drawing is done to make the jangri crispier. 2. The syrup should be slightly hot while immersing ur jangri so Heat it as per that. no need to keep ur jangri immersed for long,just a min or 2 min will do)
