Rasagulla

Rasagulla is one of my favorite sweets.I tasted it at Aryabhavan for the first time 8 yrs back and became a fan of it from that day on wards.Later I tried it at home and that time I got my rasagullas bit hard.Then I know the secret of kneading, behind the soft,smooth rasagulla and made a perfect one.If you want to make a simple delicious sweet within an half an hour,then definitely this one is my suggestion.



Do try this simple recipe and enjoy it.

Ingredients
Milk-1/2 litre
Lemon Juice-1 medium sized lemon squeezed
Sugar-1 cup
Water-1 and 3/4 cup
Ice cubes-2 cups
Elachi powder-1/2 tsp
Saffron and nuts -For garnishing

1.Start by curdling the milk.Bring the milk to boil and while boiling add lemon juice to it.It will start curdling and separates the panner and whey water.Now switch off the flame and add ice cubes to it.Adding ice cubes will prevent it from being hard and then filter it using a cloth.U will get like this


Now scramble it and knead it well with your palm for around 5-10 min to get a smooth dough like this




Then make small balls out of it 


 Now add sugar and water in a pressure cooker and bring it to a boil
Now add the elachi powder and drop the balls slowly one by one.


 Now close the lid and wait for 1 whistle then simmer the flame and cook for another 5 mins

Open the lid & allow it to cool.Serve it chill with saffron and nuts garnishing.
